Creamy Polenta

Ingredients

  • 4 cups water
  • 1 cup polenta (coarse cornmeal)
  • 1 tsp salt
  • 2 tbsp butter
  • 1/2 cup parmesan, grated

Instructions

  1. Bring water and salt to a boil in a large saucepan.
  2. Slowly whisk in polenta in a steady stream to avoid lumps.
  3. Reduce heat to low and cook for 20-25 minutes, stirring frequently.
  4. Remove from heat, stir in butter and parmesan.
  5. Serve immediately while warm and creamy.

Pro tip: For extra creaminess, substitute 1 cup of water with milk.
